Gluten Free American Pancakes Recipe

Pancakes are a quintessentially American breakfast usually served with lashings of maple syrup and strips of crispy bacon rashers.


American pancakes are a thick and fluffy and can be served with whatever you like. Here are some delicious ideas: 

  • Maple syrup & crispy bacon
  • Drizzlings of honey
  • Dollop of icecream
  • Knob of butter
  • Dollop of creme fraiche
  • Bananas or berries

     
 
Recipe:
(Makes approx 4 small fat pancakes)

125g Doves Farm plain gf flour
2 tsp baking powder
1 beaten egg
2 tbsp caster sugar
100ml milk
Sunflower oil for frying
Pinch salt

Mix all the dry ingredients together in a bowl. Then add the egg and milk and beat together to form a smooth, very thick, creamy batter.

Heat some oil in the pan and when hot add a large dollop of the batter. You could use greased crumpet rings here if you want a perfect shape, but I like them a bit messy.

Cook for a few minutes on each side until golden brown and cooked through. Repeat until all the batter is gone.

Serve with your choice of topping.
