These naan breads are great with my prawn curry or my Indian meatballs...
Recipe:
(Makes 5 small naans)
400g Doves Farm GF Self Raising Flour
Large pinch salt and black pepper
1/2 tsp baking powder
4 tsp sugar
100g natural yoghurt
2 medium eggs
Approx 100ml water
1 tbsp sunflower oil
Freshly ground pepper
The easiest way to make the dough is using a food processor with the (plastic) dough attachment.
Place all the dry ingredients in the food processor and pulse to mix.
Add the yogurt and blend. Add the eggs and blend again.
Next, whilst blending, pour in the oil and slowly pour in the water. You may not need it all, stop pouring once the dough has combined into a ball.
Turn out the dough ball onto a floured surface. At this stage, if it is too wet add some more flour and if it is too dry add some oil.
Split the dough into 5 balls. With floured hands, press out each ball into a 1/2cm flat naan bread. Shape into oval shapes.
Heat some sunflower oil in a frying pan and once piping hot add the first naan bread and cook for a few minutes on either side until cooked through and browned. Repeat with the other four.
The naan breads can be eaten straight away or left for a few hours and reheated.
Before reheating drizzle with spiced oil (optional, but recipe below) and then reheat in an oiled frying pan for a few minutes until hot.
Spiced oil recipe:
5 tbsp sunflower oil
1 tsp garam masala
1 tsp cumin
1tsp ground cayenne pepper
Mix all the ingredients together in a bowl.
Used this receipe last night and they came out very well. This is definitely the best gluten free naan recipe I've come across so far. They came out almost fluffy which is bordering on the miraculous for gf bread. I'm looking forward to messing around with it to make some fancy naans.

ReplyDeleteThe yoghurt is quite a vital ingredient but you could try making it witha dairy free yoghurt like this one http://www.tesco.com/groceries/product/details/?id=264866878 - it might work but I haven't tried it myself.
