Gluten Free Flatbread Recipe

I got the idea for this from a Jamie Oliver recipe...


It is such a simple recipe with no strange ingredients. It is basically just yoghurt and gluten free flour. The flatbreads are delicious topped or dipped and go with so many dishes.

Recipe:
(Makes 8 small flatbreads)

500g Greek yoghurt
500g (Doves Farm) GF Self Raising flour Blend
1 tsp baking powder
A drizzle of extra virgin olive oil
Salt & pepper
Sprinkling dried herbs

Mix all the ingredients together to form a dough. Split the dough into 8 small balls and place a griddle on a medium to high heat.

Take one ball of dough and press between your hands and shape into a circular flatbread that is approximately half a centimetre thick.

Place on the hot griddle and cook for about 5 minutes on each side until golden & brown. Repeat with each flatbread. Serve warm.

  1. I'm not sure I've heard of that brand of GF flour..could you use any all purpose GF flour mix?
