Gluten Free Sweet Potato Pizza Base


This pizza is totally delicious, is healthy (just go easy on any cheesy toppings) and gluten free. The gram flour gives it an amazing firm texture.
 



Recipe:
(Makes 1 medium pizza)
  • 120g gram (chickpea) flour
  • 2 medium sweet potatoes
  • Pinch salt
  • 150ml water
  • 1 tbsp oil

Stab the potatoes a few times with a knife and cook in a microwave for 6-7 minutes, until soft and cooked through.

Allow to cool then scrape the flesh out of the skins and place in a bowl with the flour and salt.

Mix a bit and then add the oil. Mix a bit more and then add the water. Using a fork combine the mixture well, mashing the potato as you go.

You should  have a pretty wet mixture. Leave it to rest for half an hour. 

Line a baking tray with baking paper (it is very important you do this or it will stick) and pour the mixture onto it. Spread out until it is just under 1cm thick.

Preheat the oven at 200 C and leave the base to set for 10 minutes.

Once the oven has heated up bake for 25 minutes until firm.

Add your toppings and place back in the oven again for 5 minutes until cheese has melted (if using).

Topping Ideas:
  •  Sweet potato, caramelised red onions, roasted peppers and feta
  •  Caramelised red onion, spinach and goats cheese with tomato sauce
  •  Ricotta, pesto & basil
