Tuna & Avocado Melt Recipe

This is a delicious and quick lunch...








 To make it a bit healthier you can use a little less mozzarella. But I like lots of it, all oozy and gooey.






 Recipe:
(Serves 2)

2 slices brown gluten free bread
1 avocado, peeled & sliced
4 tsp natural yoghurt
100g mozzarella, sliced
Splash lemon juice
185g tin tuna chunks, drained
Pinch of smoked paprika
Ground black pepper
A few basil leaves to serve
A small pinch of cress, to serve


Heat up the grill to a medium heat and put the bread in the toaster to toast.

Toss the slices of avocado in lemon juice and then in a bowl mix the tuna with the yoghurt and season with black pepper.

Top the toast with the avocado slices, then add the tuna mixture and then the mozzarella slices.

Season with black pepper and a small sprinkling of smoked paprika.

Place under the grill and cook for about 5 minutes until the cheese bubbles. Serve with basil leaves and cress.
