Bacon & Roasted Pepper Panzanella

You must try this..






This recipe is super flavoursome and easily made out of everyday ingredients. It is the perfect quick meal for one.




Recipe:
(Serves 1)

4 rashers streaky bacon, chopped
100g jarred roasted mixed peppers, chopped
1 radish, finely sliced
5 cherry tomatoes, roughly chopped
1 slice gluten free bread, cubed
1 handful spinach
10g feta
A few basil leaves
1 tablespoon balsamic vinegar 
1/2 tsp oregano
Small splash olive oil
Black pepper

Fry the bacon until golden and crispy, then add the bread to the pan so it soaks up all the delicious bacon juices and becomes golden. 

Stir in the tomatoes and peppers until they become warmed through. Splash in the oil, balsamic, oregano and pepper then stir-fry for a minutes until all combined. Allow to cool slightly.

Place the spinach in a shallow bowl, top with the bacon and bread mixture then adorn with basil leaves. Crumble over the feta and serve.
