This is a healthier burger alternative... with a kick. The Thai curry paste adds a bit of spice and delicious Thai flavours...
You can serve the burgers in gluten free buns but to keep them extra healthy, serve in lettuce leaf wraps and maybe with some sweet potato wedges or fries on the side.
Recipe:
(Makes 4 burgers)
For the burgers:
4 spring onions, finely sliced
1 tbsp red Thai curry paste
2 heaped tsp rice flour
To serve:
Place all the burger ingredients in a bowl and mix together using your hands. Squeeze and knead the meat until it becomes bound together then shape into two burger patties.
Heat the oil in a frying pan and cook the burgers on a medium to high heat for 10 - 12 minutes, flipping halfway through. Test that it is cooked though before serving.
