So far I've written recipes for cauliflower, sweet potato and spinach pizzas bases. Now it’s broccoli's turn.
Recipe:
(Makes 2 medium pizzas)
450g uncooked broccoli florets
125g chickpea (gram) flour
1/2 a cup cold water
1 small egg
Big pinch of salt

Put the broccoli florets in a food processor and blitz until you have a rice like consistency. Transfer to a large bowl and mix in the flour and salt. Add the water, mix, and then add the egg and mix well. The mixture might feel a bit wet but that's how it should be.
Preheat the oven to 200c and line two pizza trays with baking paper. Lightly drizzle the paper with sunflower oil.
Divide the mixture between the two paper lined trays and, using your hands, press the mixture into flat round pizza shapes. Leave to set for 15 minutes.
Bake the bases in the oven for 30 minutes, flipping half way through and carefully peeling off the paper.
Top with your favourite toppings and return to the oven for a few more minutes, if needed.
