GF Sweet Potato Naan Pizzas

Gluten free naan breads are easily available in most supermarkets...






 But if you fancy making your own, here's my recipe.


This is such a simple supper and a healthy-ish way of having pizza. They are loaded with vitamins and goodness.




 Recipe:
(Makes 2 small pizzas)

2 x gluten free naan breads 
60g grated cheddar
4 tbsp tomato puree
1/2 a sweet potato, peeled & diced into 1cm pieces
A few slices of red onion
Big pinch of spinach, chopped
Dried oregano
Big pinch of cress
Salt & pepper
Extra virgin olive oil 


Preheat the oven to 220c. Place the sweet potato on a baking tray and season with salt and pepper, to taste. Sprinkle with a pinch of oregano and drizzle with a little oil. Bake in the oven for 30 minutes, tossing regularly, until cooked through.

Meanwhile, place the naan breads on another baking tray and evenly spread the tomato puree over them.

Take the cooked sweet potato out of the oven then turn the oven down to 200c.

Divide the spinach and onions between the two pizzas. Top with cooked sweet potato cubes, the cheese, a pinch of oregano and season. Drizzle with a little olive oil.

Place in the oven and cook for about 5 minutes until the cheese is bubbling and golden. Serve with the cress scattered over the pizzas.
