Lemony Chicken Kebabs

This is simple food at it's best..



Perfect for any season, super healthy and wonderfully simple.



Recipe:
(Makes 2 large kebabs)

For the marinade-
1 lemon
1/2 bunch chives, finely chopped
4 tbsp. olive oil
Chilli flakes, to taste
2 sprigs parsley
Salt & pepper

Plus-
3 medium chicken breasts
1 small jar mixed roasted peppers, drained


To make the marinade, add the juice and zest of the lemon to a jug along with the chives, parsley, chilli, oil and seasoning. Stir well.

Place the chicken breasts in a shallow bowl and pour over the marinade. Cover with foil and leave in the fridge overnight.

The next day, remove from the fridge and cut the chicken into pieces, about 1 - 1 1/2 inch square.

Cut the peppers into 1 inch pieces, if it is not already chopped. Add the pieces to a long skewer, alternating chicken and peppers; a couple of pieces of pepper between each chicken piece.

Heat the grill to a medium - high heat. Place the kebabs under the grill for about 20 minutes until cooked through and charred. Turn regularly so they cook evenly.

Serve with brown rice, soured cream, lemon wedges and veggies - or whatever you fancy.
