They are so delicious, easy to make and really versatile. You can serve them with salad, with poached eggs for brunch or cold the next day in lunch boxes. They also work as a veggie burger served in a gluten free bun.
Recipe:
(Makes 6 large patties)
225g halloumi, grated
120g plain gluten free flour blend
1/2 tsp baking powder
3 spring onions, finely sliced (green ends only)
1 tsp oregano
2 small eggs
Salt & pepper
Sunflower oil for frying
Gently fry the spring onions in a little oil for a few minutes, then set aside. Do not allow them to colour.
Add the peas to a mixing bowl then, using a hand blender, mash the peas (making sure to leave some whole). Mix in the grated halloumi until combined. Then stir through the flour, baking powder, onions, oregano, eggs and a pinch of salt & pepper.
Divide the mixture into 6 and shape each sixth into a burger patty shape. Heat a tablespoon of oil in a pan on a medium heat then fry the fritters for about 5 minutes until golden. Gently flip them over and cook for a further 4-5 minutes until golden on the other side.
