One Ingredient Potato Wrap

I saw this hack on Tiktok (my lockdown entertainment!)...


I was scrolling through and then I saw that the @theplantbasedfoodie was making a wrap from one ingredient, a potato. Being part Irish I love a good potato and I thought, if this works, how awesome would that be! All you’d need for a naturally gluten free wrap is one potato.

All you had to do was peel, boil and grate a potato then flatten between two sheets of parchment paper and bake in the oven. Simple!

I gave it a try and it did work (see the video above), and it tasted really nice with some ham, cheese and rocket. But, it was quite fiddly to make. The problem was that it stuck to the paper too much. Grating the potato made it extremely sticky, like glue, which is great for making a wrap but not so great if you want to get it off the paper! It completely welded itself to the paper and it took me ages to get it off. Plus, boiling the potato whole took too long as well. So basically it took me ages and I don't have time for that!

So I decided to give my own version a go. This time, I peeled and cut up the potato then boiled it and mashed it instead. I added seasoning and herbs to give it a little je ne sais quoi (but you don't really need to do this).


Making it this way is much quicker and easier, albeit the wrap is thicker and more potatoey when you mash it, but I'm all about food that's quick and easy. Watch the video below for my version of this wrap.

Heat the oven to 210c. 

Take 1 large potato, peel it and chop it into inch pieces. Bring a pan of water to the boil and add the potato. Simmer for about 10 minutes until you can poke with a knife and it's soft. Add seasoning and herbs (if using) and mash until smooth.

Allow to cool then line a baking tray with parchment paper. Sprinkle a handful of gluten free flour onto the paper (will help with sticking) and then pile on the mashed potato. Place a sheet of parchment paper on top and press down to get it as thin as you can (a couple of millimetres). 

Remove the top sheet of paper and bake in the oven for about 16-17 minutes, turning over halfway through. The wrap should be golden, firm and crisp around the edges. 

Remove from the oven, and serve warm.
