Tuna & Chickpea Lettuce Tacos

The great thing about these lettuce tacos is that they are mostly made up of ingredients that you would generally have in your store cupboard or fridge...

They are really healthy, tasty and packed with protein; perfect for lunch or a light dinner.

(Makes 6 tacos)

6 little gem lettuce leaves
1 tin tuna, drained
1 tbsp mayonnaise 
1/2 tin drained chickpeas
1 tsp all purpose seasoning
6 baby plum tomatoes, cut into quarters
2 spring onions, sliced
30g crumbled feta
Salt & pepper
Lemon wedges, to serve
2 tsp sunflower oil, for frying

Heat the sunflower oil in a pan over a medium-high heat. Add the chickpeas, all purpose seasoning and salt and pepper and fry until hot and slightly crispy, stirring constantly so all the chickpeas get coated.

Lay out the lettuce leaves and mix together the tuna and mayonnaise. Divide the tuna between each leaf then top with the tomatoes and sprinkle over the sliced spring onions. 

To finish the tacos, add the chickpeas and crumble over some feta. Grind over some black pepper and serve with lemon wedges.
