I don’t think I ever got the chance before I became gluten free so I thought I’d have a go at making them. They are super easy and the sausage and egg is much thicker than the original, its a bit like a breakfast burger.
Recipe:
(Makes 2)
2 large eggs
250g GF sausage meat
2 cheese slices
Oil, for frying
Ketchup, to serve
GF hash browns, to serve (optional)
Brush 4 egg (pancake) rings with a little oil and heat a tablespoon of oil in a large frying pan on a medium heat. Halve the English muffins.
Fill two of the egg rings with the sausage meat and add to the pan, cook for about 6-7 minutes until half cooked. Remove the rings and flip over the sausage patties and cook on the other side until cooked all the way through, set aside.
Place two egg rings in the pan and crack an egg into each one and break the yolks. Fry on a medium-high heat for about 4-5 minutes until cooked through.
While the eggs are cooking place the muffins cut side down in the pan to toast slightly. Remove from the pan and fill the muffins with the sausage patties, cheese slices, egg and finish with ketchup. Serve with some has browns if you like (make sure they are gluten free).
