Spinach Pancakes Recipe

These are a great way of adding nutrition to your weekend pancakes...

I prefer savoury pancakes anyway so they are perfect for me, and they look pretty cool too. 

(Makes 4-5)

100g fresh baby spinach
250ml semi skimmed milk
160g gluten free self raising flour
1 egg
Salt & pepper
Oil for frying

To serve:
Fried eggs
Sliced cherry tomatoes
Sliced avocado
Fresh coriander

Blend together the spinach and milk. Add the egg, flour and seasoning and blend again until smooth. Heat some oil in a pan on a medium heat and add a ladle of the batter and cook gently for a few minutes until firm and then flip over and cook until that side is cooked too. Repeat with the rest of the mixture.

Serve with whatever you like, but I chose fried egg, tomatoes, avocado, fresh coriander and black pepper.
