Lavender Biscuits Recipe

These biscuits are something special...


The flavour is unique and they look really pretty. The lavender isn't too strong; just a subtle hum. Always be careful when adding the lavender, you don't want to put too much in or it could end up tasting like soap!



Recipe:
(Makes about 16)

200g plain gluten free flour, plus extra for dusting
75g granulated sugar
100g margarine
1 heaped tsp lavender, plus extra to decorate
1 small egg yolk

Preheat the oven to 170c and line a baking tray with parchment paper and sprinkle with a little flour.

Mix together the flour, sugar and margarine with a fork until you get a breadcrumb-like consistency. Add a teaspoon of lavender and an egg yolk and mix together again. Bring together with flour-dusted hands to form a dough. 

Roll into 16 walnut sized balls and place them on the lined baking tray. Press down with a flour-dusted fork to form a biscuit shape and top with a little extra lavender.

Bake in the oven for 15-16 minutes, don't let them colour too much. You want them to be slightly crisp on the outside and soft in the middle. Once cooked, allow to cool on a wire rack.
