Indian Meatballs Recipe

I created this dish because I wanted to combine two of my husband's favourite meals; meatballs and curry. 


It works really well. The recipe is very similar to my prawn curry recipe.

Recipe:
(Serves 2)

For the meatballs:
300g turkey mince
2 spring onions, finely sliced
2 tsp curry powder
Salt & pepper to taste

For the sauce:
1 red onion, finely chopped
1 tsp sushi ginger, chopped
400g tin chopped tomatoes
1 x 50g sachet creamed coconut
2 tsp curry paste
1 tsp curry powder
8 cherry tomatoes, sliced
100g spinach
Tablespoon vegetable oil, for frying
1/2 tsp salt
Water (1/2 tin)
1 tbsp tomato purée
2 tbsp freshly chopped parsley, to serve

 
Combine all the meatball ingredients and roll into balls the size of golf balls. 

Heat the oil in a large frying pan and cook the meatballs, turning regularly, until browned and almost cooked through. 

Add the onions and fry until slightly softened. Add the ginger, curry powder, cherry tomatoes and curry paste, and stir fry for a few minutes longer.

Next add the chopped tomatoes, purée, coconut and seasoning. Fill half the tin that contained the tomatoes with water and stir that into the sauce.

Stir & leave to simmer for about 20 minutes until the sauce has reduced. Tip in the spinach and stir in until wilted.

Serve with rice or gluten free naan breads and pappadums.  You can make your own naan breads using my recipe.

  1. Wow Camilla, This recipe looks interesting...Meatballs/curry?! Is it Italian or Indian or thai?! Love it.ha!..am going to have to try this one day...has made me very intrigued! :-)
