This recipe for 'cocoa only' brownies came about when I fancied a chocolate fix but didn't have chocolate in. It is surprising how well they work just using cocoa.
120g Plain Gluten Free Flour Blend
115g margarine
200g caster sugar
50g cocoa powder
1 egg
1 tbsp skimmed milk
Preheat the oven to 200c and line a small cake tin with baking paper and lightly grease.
Melt the margarine in a small saucepan. Place the sugar and cocoa powder in a mixing bowl and add the melted margarine, stir in until you have a chocolatey paste.
Stir in the flour and and then beat in the egg with a wooden spoon. Next stir in the milk until combined and then scrape the mixture into the small cake tin.
Bake in the preheated oven for about 20 - 25 minutes, or until cooked through and crisp on top and a cake tester comes out almost clean.
Allow to cool a bit in the tin, then transfer to a wire rack to cool completely. Cut into squares or rectangles and serve.
