Gluten Free Waffles

These waffles go with anything; from sweet to savoury...


They are easy to cook up and are so tasty. Here are some delicious topping ideas:

Bacon & Maple Syrup
BBQ Pulled Pork & Slaw
Tuna Salad
Melted Cheese
Sausage sandwich
Fried Chicken
French Toast Doughnut Waffles

This recipe makes four large waffles when using my waffle machine. I use a Cuisinart Waffle Iron with two large square grids.
 
Recipe: 

125g Plain Gluten Free Flour Blend
1/2 tbsp caster sugar
1/2 tbsp baking powder
1/2 tsp salt
210ml skimmed milk
60g melted margarine
1 egg + 1 egg yolk, beaten

Place all the dry ingredients in a mixing bowl and mix together. 

Next add the milk, margarine and eggs and whisk until you have a smooth batter. 

Leave the batter to rest for about 10 minutes and then give another brief whisk. 

Heat up your waffle iron and once it reaches the correct temperature, spray with oil. 

(If using a similar iron to me) pour a quarter of the mixture onto each grid, close and cook for about 5 minutes or until cooked through and you have two waffles. Repeat again with the remaining mixture. 

You can keep them warm on a wire rack in a low heated oven. Don't put on a plate or the bottom might go soggy. 
 
You can freeze the cooked waffles and reheat them by popping them in the toaster for a few minutes until defrosted and hot through.
