It is so healthy and delicious and quick to make. I first made this when I was ill with a terrible cold and in desperate need of goodness and vitamins. For the sake of speed and ease, use tinned pineapple. But you can't beat fresh pineapple for flavour and freshness.
Recipes:
(Serves 1)
1 big handful spinach
A few other salad leaves
100g pineapple, cubed (tinned or fresh)
2 radishes, finely sliced
1 spring onion, finely sliced
Big pinch cress
20g feta, crumbled
Extra virgin olive oil, to serve
Freshly ground black pepper, to serve
Place the bacon in a hot frying pan and fry on a high heat until golden and crisp, stirring regularly.
Meanwhile, spread the spinach and other leaves over a plate or bowl. Scatter over the pineapple, radishes, spring onion and cooked bacon.
Top with the crumbled feta and pinch of cress. Serve with a good grind of black pepper and a drizzling of olive oil.
