Californian Summer Sandwiches

I don't exactly know what Californians eat in their sandwiches...


But this is what I imagine I would eat all the time if I lived in California; sandwiches full of green and orange goodness. The taste of sunshine in a sammy.


 Recipe:
(Serves 2)

4 slices brown gluten free bread
1 big handful spinach
100g mozzarella, sliced
1 small carrot, ends off & grated
2 big pinches cress
1 small avocado, peeled, sliced & tossed in lemon juice
4 thin slices smoked salmon
Mayonnaise
Salt & pepper


Lay out your bread and spread a thin layer of mayonnaise on each slice. Divide the spinach between two of the slices, spread out in an even layer and gently press down to flatten.

Press the grated carrot with kitchen towel to absorb any excess liquid. Place the carrot on top of the spinach then place the mozzarella slices on top of the carrot.

Season well then add a layer of avocado, the smoked salmon and then finish with the cress. Top each sandwich with the other slices of bread. Press down firmly but gently and cut the sandwiches in half.

Serve with fries or sweet potato wedges.
