Chorizo, Bean & Kale Noodle Bowl (Spiralized)

This is the perfect healthy meal for one..


It is easy and quick to make. The noodles are made from spiralized sweet potato so it is full of nutritious goodness.



Recipe:
(Serves 1)

1 small sweet potato, peeled
60g chorizo, diced
1 small handful kale
60g pinto beans, drained
60g black beans, drained 
30g chickpeas, drained 
1 big pinch paprika
1 level tsp dried oregano 
150g passata
10g feta 
A few parsley leaves
Salt & pepper
1 tbsp Sunflower oil, for frying

Chop the ends off the sweet potato so it has two even flat ends. Place in your spiralizer and spiralize into noodles.

Heat the oil in a large lidded frying pan, add the chorizo and cook until crisp and the oil turns orange. Add the sweet potato, paprika and oregano and cook for 10 minutes on a medium-high heat with the lid on. Gently toss the sweet potato every couple of minutes. 

After a further 10 minutes add the beans, chickpeas, kale and passata. Season well then put the lid back on and cook for a further 5 minutes. It doesn't matter of the noodles break up a bit; it actually makes it easier to eat if they are shorter.

Serve with the parsley leaves and crumbled feta.
