Chunky Mixed Tomato Salsa

 This salsa goes with anything..



...probably. I haven't actually tried it with everything but it is so delicious and fresh, you can't really go wrong with it.


It is perfect for picnics, as a side dish or instead of a dip.  


Recipe:
(Makes 1 jar or bowl)

250g small mixed coloured tomatoes
1 large corn on the cob
1/2 bunch basil, finely chopped
1/2 red onion, finely diced
1/2 small cucumber, deseeded and diced into 1cm pieces
1/2 tsp dried oregano
Chilli flakes, to taste
Salt & pepper
Drizzle olive oil


Heat a griddle pan to a high heat. Place the corn on it and cook until hot and a bit charred and blackened. Allow to cool.

Quarter the tomatoes and place in a big mixing bowl. Add the red onion, cucumber, basil, oregano and chilli flakes. Place the corn on its end end and carefully slice off the charred corn kernels, add to the bowl.  

Season to taste, drizzle with a little oil then toss everything together really well.
