Smoked Salmon Breakfast Tacos

When we were in the Lake District, I wanted to create a recipe that was as fresh and tasty as our surroundings... and you know I love a good taco.






These tacos are divine and so so easy to make with no actually cooking to do.







It is all basically just assembly, but they look and taste pretty impressive. If I can't get hold of any corn tortillas, I use gluten free wraps and trim them down a bit.









Recipe:
(Makes 4 tacos/Serves 2)

4 small gluten free tortillas or wraps
4 slices smoked salmon
1 lemon, halved
1 tbsp chopped chives
4 tsp cream cheese
4 tbsp soured cream
4 big pinches of cress 
Small handful rocket
Freshly ground black pepper

Lay out the four tortillas and spread a tablespoon of cream cheese down the middle of each one. Top each one with a small pinch of rocket, then a tablespoon of soured cream and a scattering of chives. 

Lay the smoked salmon over one half of the tortilla then top with the cress and season heavily with the black pepper. Serve with a lemon half each for squeezing. 

Easy!
