3 Ingredient Banana Pancakes

These pancakes are so easy and all you need is 3 simple ingredients...


They are made up of bananas, eggs and gluten free flour, plus any extras for toppings. I use maple syrup and extra banana slices, but you could use honey, golden syrup or maybe some walnuts.


They are healthy and very filling, the perfect breakfast. Definitely good to give you an energy boost in the morning.


(Makes 4 pancakes)

2 ripe medium sized bananas
3 large eggs, beaten
1 heaped tsp self-raising gluten free flour

Sunflower oil for frying & greasing
Maple syrup, to serve
Extra banana slices, to serve


Chop and mash the bananas in a large bowl using a fork. Add the beaten eggs and mix together until as smooth as possible (it will be a bit lumpy) then add the flour and mix until combined. 

Heat a tablespoon of oil in a large frying pan and oil 4 pancake rings, add them to the pan and turn the heat to a medium-high heat. 

Ladle the pancake mixture into the 4 pancake rings and cook for a few minutes until they start to firm up. It doesn't matter if the mixture leaks out of the rings a bit, you can trim them at the end if you want them to look perfect!

Once they start to firm (after about 4 minutes), remove the pancake rings and flip the pancakes over. Cook for another few minutes until golden brown and cooked through.

Serve with maple syrup and extra banana slices (optional).
