It's so satisfying to make, super simple and really tasty, I'm not surprised it has become the latest lockdown trend! So, if you haven't tried it already, here is my gluten free take on the Baked Feta Pasta.
Recipe:
(Serves 3)
300g gluten free fusilli pasta
1 x 200g block of feta cheese
500g cherry and baby plum tomatoes
1 bunch basil
2 heaped tsp dried oregano
1 tsp dried chilli flakes
1 whole red chilli
2 handfuls of pine nuts
1 tbsp garlic oil
Salt & pepper
Preheat the oven to 200c. Place the whole tomatoes in a baking tray and coat in the garlic oil. Place the feta in the middle of the tray and then sprinkle over the oregano, chilli flakes and season with salt & pepper. Place the whole chilli on top of the feta.
Bake in the oven for about 30 minutes. Meanwhile cook the pasta per packet instructions, chop the basil leaves and toast the pine nuts in a dry frying pan until lightly golden.
Remove the tray from the oven and mix the feta and tomatoes together with fork, mashing the tomatoes as you go. Stir through the basil then add the pasta, making sure it is all coated. Slice the whole chill and add to the pasta along with the toasted pine nuts.
Stir through and serve immediately.
Tip - if your sauce is too dry, add a few tablespoons of the pasta water to loosen it up.
