Pineapple Smoothie Bowl

This is such a lovely breakfast...


It’s pretty easy to make but looks really fancy! The hardest part is hollowing out the pineapple but once you know what you‘re doing it’s quite easy.

Recipe:
(Makes 2)

1 pineapple
2 tbsp GF oats
1 tsp turmeric
1 cup mixed berries
Half a tablespoon of honey
1 cup of milk
1 tsp chia seeds


To serve - 
Sprinkling of chia seeds
Sprinkling of desiccated coconut
Fresh fruit to serve (I used banana, strawberries & orange slices)


Cut the pineapple in half longways (I kept the top whole because I was only making one but you can cut it in half to make two pineapple bowls), hollow out and set the flesh aside. Discard the tough middle bit (see video).

Blend the oats and chia seeds for a few seconds then add the berries, turmeric, honey, milk and half of the pineapple flesh and blend again until smooth.

Pour the blended smoothie mixture into the pineapple bowls, top with chopped fresh fruit and sprinkle over some desiccated coconut and chia seeds.
