Halloumi Fries Recipe

Crispy on the outside and soft and chewy in the middle these Halloumi Fries are divine...

They are quick and easy to make and taste great with the coriander, yoghurt and pomegranate toppings.

Recipe:

1 x 225g block halloumi
30g pomegranate seeds
60g plain gluten free flour
1/2 tsp paprika
1 egg, beaten
1/2 tbsp chopped coriander
A drizzle of Greek yoghurt
Black pepper
1 tbsp olive oil, for frying

Beat an egg then set aside. Pat down the block of halloumi with kitchen towel to get out any excess liquid and slice it up into chips.

Add the pepper and paprika to a bowl of gluten free flour and mix together. Dip a halloumi chip into the egg, and make sure it is all coated. Then dip into the flour mixture making sure, again, that it is all coated. Then repeat with all the chips.

Heat the olive oil in a large frying pan and cook on a medium high heat until crispy and golden, making sure you turn them regularly.

Plate up the chips and top with chopped coriander, pomegranate seeds and a drizzle of Greek yoghurt.
