Watermelon Nojitos Recipe

I thought I'd better get this recipe published before the summer comes to an end..


I haven't had any alcohol since December 2020 because I'm recovering from long covid, so I'm always looking for nice alcohol free drinks to have. This one is delicious, refreshing and great if you have leftover watermelon. 


Recipe:
(Makes 1 jug)

5 limes (2 sliced, rind of 1 and juice of 2)
500g watermelon, deseeded and chopped (plus extra to serve)
1 tbsp of honey
2 tbsp caster sugar (or more depending how sweet you want it)
Ice cubes
Handful of raspberries
Half a bunch of mint, leaves torn
1 litre of soda water 


Place 1 tablespoon of the sugar in a bowl with half the lime rind, mix together and set aside. 

Add the chopped watermelon and honey to a blender and blend until smooth. Place slices of 2 limes in the bottom of a large jug and muddle with a wooden spoon to release the juice. Pour over the watermelon mixture then add the mint leaves, lime juice and remaining lime rind. Pour in the soda water, a bit at a time to avoid it fizzing up, and mix. 

Stir in 1 tablespoon of sugar (or more if you want it sweet) and mix well. Add the raspberries and ice cubes and mix again. 

Lightly wet the rims of two glasses with some leftover lime and then dip them into the the sugar and lime bowl to coat the rims in sugar. Pour the Nojito mixture into the glasses and serve with extra watermelon slices.
