Banana Oat Cookies Recipe

Sorry for the lack of blog posts lately! I have been super busy with work and I had a pretty bad long covid relapse followed by that horrible cold that everyone seems to be getting... 


So I had to really scale right back on all activities and put my health first... 


I have a huge back log of blog posts to write but to start off with, I’m back with this delicious recipe for banana oat cookies. They are so easy to make and great for an energy boost. They have a lovely crisp outside and a chewy middle. 


Recipe:
(Makes 11-12)

2 small bananas
120g gluten free oats
2 tbsp honey
1 tbsp sunflower seeds
1/2 tbsp rapeseed oil
80g milk chocolate chips 
A little gluten free flour for dusting


Mash two bananas in a bowl, add the gluten free oats, honey sunflower seeds and rapeseed oil. Add the chocolate chips and mix together until evenly combined. 

Leave the mixture to absorb for 20 minutes and preheat the oven to 170c. Line a baking tray with parchment paper and a dusting of GF flour. 

After 20 minutes, take handfuls of the mixture and shape into about 12 cookies and place them on the lined baking tray.

Bake in the oven for 15-17 mins until golden and crispy on the outside then place on a wire rack to cool.
