Eggy Stuffed Bread Recipe

These are really versatile, you can stuff them with whatever you like..

My favourite combo is ham, spring onion and feta. So tasty and makes a really nice brunch for one. 

(Serves 1)

15g feta
2 gluten free bread rolls or English muffins
2 eggs
1 spring onion
3 slices wafer thin ham
1 tsp oregano
Salt & pepper

Preheat the oven to 190c. Chop the spring onion and ham into small pieces. Slice the top off the English muffin or bread roll and hollow out the middle and place on a baking tray. The insides can be saved and used as breadcrumbs at a later date.

Beat the eggs together with the seasoning and oregano. Fill the bread with the ham and spring onions then pour over the beaten eggs and top with the crumbled feta. 

Bake in the oven for 20-25 or until egg is firm and cooked through.
