They are similar to my flatbread recipe and really easy to make. They are crispy and golden on the outside and soft and cheesy on the inside.
Recipe:
(Makes 4 small flatbreads)

220g Greek yoghurt
220g GF Self Raising flour Blend
A drizzle of garlic infused oil
1 tsp Italian herbs
40g grated cheddar cheese
Salt & pepper
Mix together the yoghurt, flour, garlic oil, herbs and seasoning to form a dough. Split the dough into 4 small balls. Take one of the pieces of dough and flatten, then place a pinch of the cheese in the middle and bring in the edges of the dough so it is all covered (see video above) and shape into a patty shaped flatbread. Then repeat with the remaining three pieces of dough.
Heat a large frying pan on a a medium to high heat. Place the flatbreads in the dry pan and cook for about 5-7 minutes on each side until golden & brown and the cheese in the middle has melted. Serve warm with tomato soup (optional).
