Cherry Berry Granola Pancakes

I made these because I had lots of cherries and strawberries leftover and they turned out great...

(Makes 3-4 pancakes)

125g plain gluten free flour
2 tsp baking powder
1 beaten egg
4 tsp caster sugar
100ml milk
10 Starlino Maraschino Cherries* + 2 tsp of their syrup
4 strawberries, chopped 
Sunflower oil, for frying

To serve:
1 strawberry, sliced
2 tbsp thick set natural yoghurt
1 tsp cherry syrup 

Mix all the dry ingredients together in a bowl. Then add the egg and milk and beat together to form a smooth, thick batter. Stir in the cherries, syrup and strawberries.

Heat some oil in a pan on a medium heat and grease some pancake rings. Once hot add the rings to the pan and ladle the batter into each ring. 

Cook for a few minutes until the pancakes are golden brown and starting to firm, then flip them over and cook all the way through. 

Stack the pancakes with layers of the thick yoghurt then top with some more yoghurt, the granola, strawberry and a drizzle of the cherry syrup.
