Prawn & Mango Rice Salad

I made this recipe for the first time during the first lockdown...

 

The London parks had reopened and we were allowed to picnic again so I thought I'd make myself something really delicious and head to Brockwell Park. Its really tasty and easy to make and is the perfect filling salad for a summers day.


Recipe:
(Serves 2)

120g brown rice
150g cooked jumbo king prawns 
12 baby plum tomatoes, halved
4 slices of tinned mango (in syrup)
2 spring onions, finely sliced
25g feta
1 handful of rocket 
1 tbsp olive oil 
1 tbsp syrup from mango
Juice of half a lime, plus extra to serve 
Freshly ground black pepper

Cook the rice as per packet instructions then allow to cool completely. Add the rice to a bowl with the prawns, halved tomatoes and spring onions. Chop the mango slices and add to the bowl, making sure to save the syrup. 

Crumble in the feta, add the rocket and gently toss everything together. 

Mix 1 tablespoon of oil, 1 tablespoon of the syrup and the juice of half a lime to make the dressing. Pour the dressing over the salad and serve with freshly ground pepper and lime wedges.
